Butternut Squash and Goat Cheese Pizza


On our last trip to the grocery store we bought some butternut squash, a wonderful, currently in season vegetable. Since the husband and I always have a few Trader Joes pizza crusts on hand, we decided to get creative. I used half of the butternut squash for this recipe (the rest went into the fridge to be used in a delicious quinoa recipe)
  • 1 store bought pizza crust
  • 1/2 a butternut squash, cut into 1/2 inch pieces
  • olive oil
  • salt and pepper
  • 1 c. shredded mozzarella
  • crumbled goat cheese
Preheat the oven to 475.

After peeling and cubing the squash, season with salt and pepper and saute in a little bit of olive oil until soft.

Drizzle olive oil all over pizza crust and top with shredded mozzarella cheese. Top with cooked butternut squash and sprinkle the goat cheese on top. Cook for 12 min. Viola!
