Harvest Granola Bars


Happy Friday! I wanted to share this wonderful, choose your own filling recipe over that I found over at Good Life Eats, where Katie put together a little how to for chewy granola bars.


1. Rolled Grains (i.e. oats): 2 1/2 cups total
2. Nuts, Seeds, & Spices: 1 cup total Nuts & Seeds, Spices per your discretion.
3. Sticky Sweetener: 1/3 + 1/4 cup
  • For something sweet you’ll need a sticky sweetener, such as honey, agave, molasses, maple syrup, etc. Sweetener adds moisture and flavor.
  • Use the full amount as one sweetener, or mix up the flavors.
4. Dried Fruits: 1 cup total
5. Binder: 1 cup total
  • This is what will hold the bars together and keep them chewy without over drying.
  • These Molasses and Ginger Granola Bars use pureed dates, but get creative. Prunes, Apple Butter, and Almond Butter would be great choices too.
Fill a parchment lined sheet tray with the mixture, and bake at 325 for 25 minutes, chill in the freezer until firm, remove from parchment paper and cut into bars.

Using these basic instructions, I came up with my own Harvest Granola Bars. 

2 1/2 cups rolled oats
1/2 cup chopped almonds
1/2 cup cups pepitas (hulled pumpkin seeds)
1/3 cup honey
1/4 maple syrup
1 cup dried apple rings, chopped
1 cup honey apple butter.

Preheat oven to 325. Mix all ingredients in a large bowl. The original recipe calls for using a food processor, and although I used our food processor/blender combo, I felt you could get by with some good hand mixing. Place in a parchment lined sheet tray. I used a spatula to form a nice rectangle since my sheet tray was very big and smoothed it out with a spatula. Bake at 325 for 30-40 minutes. I know it's more than the original recipe but I wanted them to be a bit more firm. Place in the freezer for about an hour. Remove from parchment paper and cut into bars.

Update: After removing these from the freezer, then storing them in an airtight container in the fridge, I found the bars to be a little too soft and sweet for my taste. So I popped them back in the oven for 25 minutes at 350, which toasted the walnuts and oats and gave it a more balanced flavor. Next time I'll bake them at 350 in the beginning for 45 min to an hour.

Happy Weekend

What is everyone up to this weekend? I finally got around to using my birthday gift card and I had a wonderful spa day yesterday including body scrub, facial and a Swedish massage. It was much needed after these past few weeks of school. Tomorrow, I'm going to get up bright and early and scope out the farmers market. I hope to get some delicious veggies and maybe some flavored balsamic vinegar for summer salads. Then I'll spend the rest of the weekend preparing for my last OB exam on Monday, which apparently, I need to study for more than I have been. I hope everyone has a wonderful weekend.

What is everyone up to this weekend? Tonight, Mike and I are heading to an outdoor wedding (hope the weather cooperates). As for the rest of the weekend, I'm off from clinicals (one of very few weekends) so I'm going to be sitting on my patio doing homework, hopefully fitting in a bike ride or too, and getting together with some friends for lunch on Sunday. Hope you have a wonderful weekend!

Happy Weekend


Hello friends, I hope you enjoyed your weekend. My weekend consisted of a dinner party with friends on Friday and my final clinicals of the semester on Satuday and Sunday. What's everyone else up to this weekend? Are you finishing your Christmas shopping? We finished our Christmas shopping on Thursday, snuck in between finals and grocery shopping and house cleaning. Is anyone else finishing their Christmas shoppping or holiday decorating. Leave a comment below and let me know about your last minute holiday preparations.

Happy Friday



What's everyone up to this weekend? Saturday is our annual family Christmas party. Unfortunately, I can't be too merry as I have to get up early for round two of clinicals at the hospital. I also have to try to squeeze in grocery shopping, Christmas shopping, and two online tests (only one week left...) I hope everyone has a fun weekend with not too much crazy holiday prepping, but maybe a little relaxing too.

Happy Friday



Well, this is it. My first clinical in the hospital. After 13 weeks of theory classes, I'm finally heading to the hospital to work with patients. I'm nervous. Not to mention, I have a math test this evening. These last few weeks of school are going to be really busy, with 7 tests, 4 clinicals and a patient care plan to be completed in the three weeks before the end of the semester. But it'll be alright, I'm still just taking it one week at a time until I get a month break from my nursing program. To give me a little reprieve this weekend, I'm grabbing Olive and heading up north a ways for Jingle Paws. Yeah, I'm that person who brings their dog to such events. Hey, it gets me away from homework and studying and Olive a break from pouting while I do said studying. Anyway, I hope everyone has a wonderful weekend. Any fun plans? Any end of semester homework? Happy Friday

Fridays have just been creeping up on me so fast lately. With weekend clinicals and a quick trip to Michigan the last few weeks have just flown by. The semester is beginning to wind down, but this next week includes nursing lab, an education presentation, an exam, a 3-5 page paper, an online discussion board, a visit from the inlaws (which means house cleaning), and cooking homemade green bean casserole for Thanksgiving. Glad I have some Tazo Chai Latte in the fridge to help me make it through the week.

P.S. I dropped my phone in the toilet. The good news is that it was a clean toilet. The bad news is that I dropped it in the toilet. I went and upgraded to the iPhone 4. Although it's great to have the newest phone, we had decided to wait to upgrade our phones until we really needed to, so I'm still pouting about it a bit.
